I have many clients that have 2 or maybe 3 screens. Remoting into them can be a pain. Is there a way to force it to just 1 screen by default? Kind of like RDP does.

Not that I am aware of. RDP creates its own user session, so you see 1 monitor because that is all that exists in the session. ScreenConnect mirrors the user session, so you get as many monitors as the user is seeing. I have so many clients with multiple monitor setups that I finally just upgraded my desktop to this: https://www.amazon.com/gp/product/B072C7TNC5
It is great for controlling multi-monitor systems, but it really sucks to connect TO this system from a laptop.
