We have locked our server down to use only fips 140-2 validated encryption methods.

I am unable to find any documentation or supporting information as to whether or not the support sessions themselves follow the encryption methods allowed by the server or if they have a self-contained cipher suite.

Any information would be useful.

Session traffic goes through the Relay and this process does not use methods provided by IIS (or ones that can be disabled via iiscrypto to my knowledge). It uses methods provided by the .NET framework.
